Avoid overnight/long defrosting: Lobster meat is rich in protein and moisture. Extended thawing (e.g., at room temperature or in a regular fridge compartment for over 24 hours) causes severe juice loss, making the meat prone to spoilage, softness, or breakage.

Best defrosting method: A few hours before cooking (or the night before), remove from packaging and thaw in a low‑temperature fridge (0–4°C) until slightly softened; or keep sealed in its bag and submerge in ice water for quick thawing. After defrosting, pat dry thoroughly with kitchen paper before cooking.
