Principle of acid removal: After slaughter, muscles accumulate lactic acid and become acidic. If untreated, the meat turns tough and loses flavor. Acid removal allows lactic acid to gradually break down in a low-temperature environment, raising the pH level so the meat becomes tender and its flavor enhanced.
