-Skirt steak is in fact a bovine's diaphragm. Since each bovine only contains 1 of it, it is of the most precious and scarce part of the sirloin. It has a thin layer and abundant gelatin, it is soft and crispy.

-Angus skirt steak carries abundant flavor of beef, while not being too gamy and is odorless, the ratio of fatty to lean meat is well balanced, suggesting its chewiness and crispiness
