"Prise de mousse" is a French vocabulary, directly translated as "foam" or "frothing". In the brewing process of champagne, it means that the gas in the bottle gradually dissolves into the liquor during the second brew in the bottle, forming the foam in the bottle. This process usually takes some time, and is one of the most important steps in the making of champagne or other sparkling wine. Therefore "Prise de mousse" can be generally understand as the formation of foam in the brewing process, especially in the fermentation process.
